The hand-harvested grapes are gently transported to the cellar, where only the finest clusters are selected through meticulous hand sorting. The grapes are destemmed and undergo a 24-hour cold maceration to enhance flavour extraction. Fermentation follows with carefully chosen yeast strains and regular pump overs to maximize colour and tannin integration. After fermentation, the wine undergoes an extended maceration period to develop complexity before malolactic fermentation in small French oak barrels. The wine is then aged for up to 18 months, allowing the oak to impart nuanced flavours and polish the final blend to perfection.
The 2022 Legacy Cabernet Sauvignon is a captivating expression of Stellenbosch’s renowned terroir.
