The grapes are hand-harvested and transported to the cellar, where they undergo a meticulous sorting process. After sorting, the grapes are destemmed and subjected to 48 hours of cold maceration to enhance flavour extraction. The wine is fermented with a blend of carefully selected yeast strains, with regular pump-overs to maximize colour and tannin extraction. Following fermentation, the wine undergoes malolactic fermentation in small French oak barrels, where it is aged for up to 18 months. This aging process imparts complexity and character, elevating the wine to its full potential.
The Passione Pinotage is an exquisite premium wine that displays the very best qualities of this distinctive South African varietal. On the nose, aromas of ripe dark cherry and blackberry are complemented by delicate hints of vanilla, toasty oak, and a subtle touch of warm spices. The palate unfolds with velvety layers of black plum, succulent raspberry, and nuances of dark chocolate, all framed by a gentle smokiness from the oak aging. The seamless integration of oak enhances the wine's natural fruitiness, adding depth and complexity. Silky smooth tannins embrace the palate, delivering a luxurious texture and elegance. The grapes for Passione Pinotage are sourced from a single vineyard, situated high within the estate at 220 meters above sea level. This elevation ensures a gradual ripening process, allowing the grapes to reach full physiological maturity. Located on south- and southwest-facing slopes, the vineyard benefits from cooler daytime temperatures and is shielded from the heat of the summer months. The soil consists of decomposed granite interspersed with clay layers, providing excellent water retention and fostering optimal ripening. Stringent canopy management is employed to ensure the grapes achieve the perfect balance of colour and tannin ripeness.
