Owner’s Selection Chardonnay 2022
The grapes are hand-harvested in the early morning to retain freshness, then cooled and transferred to a drainer tank to collect only the finest free-run juice. Fermentation begins in stainless steel tanks using carefully selected yeast strains, after which the wine is transferred to fine French oak barrels to complete fermentation. Malolactic fermentation is intentionally avoided to maintain the wine’s natural vibrancy and freshness. The wine matures for up to 10 months, developing complexity, creaminess, and a seamless integration of oak and fruit flavours. The result is a Chardonnay of balance, elegance, and restrained sophistication.
This wooded Chardonnay offers a captivating balance of vibrant fruit and delicate oak influence. Inviting aromas of ripe yellow apple, juicy pear, and hints of tropical pineapple gracefully mingle with subtle notes of vanilla and a touch of toasted oak. On the palate, the creamy texture beautifully complements the luscious fruit flavours, with crisp green apple and zesty citrus taking centre stage. Gentle oak aging imparts depth and a rounded mouthfeel, enhancing the wine’s natural freshness without overpowering its elegance. Balanced acidity provides a refreshing lift, leading to a bright, lively, and satisfying finish. A lingering interplay of fruit and oak leaves a lasting impression of refinement and poise.
