The grapes are hand-sorted and destemmed with precision, ensuring only the finest fruit proceeds to fermentation. Fermentation occurs in stainless steel tanks with regular pump overs, extracting vibrant colours and refined tannins. Following fermentation, the wine undergoes malolactic fermentation before aging in fine French oak barrels for up to 24 months. This extended maturation process adds nuanced layers of flavour and polished complexity, resulting in a truly remarkable expression of Cabernet Sauvignon.

The Grand Legacy Cabernet Sauvignon is crafted from grapes grown on the estate’s prized south-west facing slopes. These slopes bask in ample sunlight while remaining shielded from summer heat, ensuring a slow, even ripening process that develops exceptional colour and flavour. The vines thrive in decomposed granite soils, which promote excellent drainage and controlled moisture stress, resulting in enhanced complexity and concentration. Rigorous canopy management ensures optimal exposure and airflow, fostering full physiological ripeness of the tannins.
