Harvesting takes place in the cool early mornings into small lugs to preserve fruit integrity. Grapes are cooled overnight, sorted, and gently pressed. Fermentation occurs exclusively in stainless steel tanks at controlled low temperatures to retain freshness and aromatic precision. The wine rests on fine lees for 6 months, adding texture and complexity while maintaining a clean, fruit-forward profile.
The undulating terroir of ASARA offers exceptional variation in microclimate and soil type, shaping the style and quality of the wine. Chardonnay grapes are sourced from two opposing vineyard blocks near a dam, contributing a balance of freshness and natural fruit intensity.

Vines are planted at an average altitude of 100m above sea level, with southwest- and northeast-facing slopes ensuring extended ripening periods. Soils are nutrient-rich, and well-drained, enhancing the purity of the fruit. The vineyards average 16 years in age and yield at 5-6 tons per hectare.
