The grapes are carefully hand-harvested during the early morning hours and swiftly transported to the cellar. After cooling, they are sent to a drainer tank, where only the finest free run juice is carefully collected, settled, and cleaned before the fermentation process begins. Fermentation is initiated in stainless steel tanks using carefully selected yeast strains before the wine is transferred to the finest French oak barrels. The fermentation process is then completed in these barrels. To preserve a sense of freshness, malolactic fermentation is intentionally prevented. The wine is aged for up to 10 months, allowing it to develop and mature gracefully.
